Broccoli, Rice, Cheese, and Chicken Casserole








This is a delicious twist to broccoli, rice, and cheese casserole, and is VERY easy to make.



Ingredients:

2 cups water

2 cups uncooked instant rice

2 (10 ounce) cans chunk chicken, drained

1 (10.75 ounce) can condensed cream of mushroom soup

1 (10.75 ounce) can condensed cream of chicken soup

1/4 cup butter

1 cup milk

1 (16 ounce) package frozen chopped broccoli

1 small white onion, chopped

1 pound processed cheese food


Directions:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium saucepan, bring the water to a boil. Mix in the instant rice, cover, and remove from heat. Let stand 5 minutes.
  3. In a 9x13 inch baking dish, mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese.
  4. Bake in the preheated oven for 30 to 35 minutes, or until cheese is melted. Stir halfway through cooking to help cheese melt evenly.

Crustless Pizza Quiche








Ingredients:

1/2 c. pepperoni, diced

8-oz. can sliced mushrooms, drained


5 eggs, beaten


3/4 c. milk


1/8 t. dried oregano


1/8 t. dried basil


8-oz. pkg. shredded mozzarella cheese

 


Directions:
 
 
Layer pepperoni and mushrooms in a greased 9" pie plate. 
In a bowl, whisk together eggs, milk and seasoning; pour over pepperoni and mushrooms. 
Top with cheese. 
Bake, uncovered, at 400 degrees for 20 to 25 minutes, until golden and heated through. 
Serves 4 to 6.

Cheesy Baked Tortellini











Ingredients:

10-oz. pkg. refrigerated cheese tortellini

2 c. marinara sauce


1/3 c. mascarpone cheese or softened cream cheese


1/4 c. fresh Italian parsley, chopped


2 t. fresh thyme, chopped


5 slices smoked mozzarella cheese


1/4 c. shredded Parmesan cheese




Directions:


Prepare tortellini according to package directions; drain and set aside. 
Meanwhile, in a bowl, combine marinara sauce, mascarpone or cream cheese, parsley and thyme. Fold in tortellini. Transfer to a greased 9"x9" baking pan. 
Top with mozzarella and Parmesan cheeses. 
Bake, covered, at 350 degrees for about 30 minutes, or until cheese is melted and sauce is bubbly. Serves 4 to 6

Apple-Pork Chop Casserole








Ingredients:

1 T. oil

8 boneless pork chops


2-6-oz. pkgs. herb-flavored stuffing mix


2-21-oz. cans apple pie filling



Directions:


Heat oil in a skillet over medium-high heat. 
Cook pork chops in oil until both sides are browned. 
Meanwhile, prepare stuffing according to package directions. 
Pour pie filling into a lightly greased 13"x9" baking pan; lay pork chops on top. 
Cover with stuffing. 
Bake, uncovered, at 325 degrees for 45 minutes to one hour, until pork chops are cooked through. Serves 8.

Cheesy Squash Casserole

Ingredients


  • 1 tablespoon vegetable oil
  • 6 medium yellow summer squash, thinly sliced
  • 1 large Vidalia onion, thinly sliced
  • 1 tablespoon butter
  • 1/2 cup grated Parmesan
  • 1 cup shredded sharp Cheddar
  • 1/2 cup sour cream
  • Salt and freshly ground black pepper
  • 1 sleeve crackers, crushed medium to fine (recommended: Ritz)



Directions

Preheat the oven to 350 degrees F. Grease a 2-quart casserole dish.

Heat the oil in a large skillet over medium heat. Saute the squash, onion, and butter until soft. Transfer to a bowl and stir in the Parmesan, Cheddar, and sour cream. Add salt and pepper, to taste.

Place in the prepared casserole dish and sprinkle the cracker crumbs evenly over the top. Bake for 20 minutes or until the top is golden and bubbly.

Breakfast Casserole







Makes: 12-18 servings

Ingredients:


  • 1/2 – 1 pound sausage
  • 1 package crescent rolls
  • 1 cup cheddar cheese, shredded
  • 5 eggs
  • 1/4 cup milk
  • 1 Tsp oregano or rosemary
  • 1/2 tsp salt
  • 1/4 tsp pepper



Directions:


  1. Preheat oven to 400 degrees.
  2. Place a skillet over medium heat and add the sausage. Break up the sausage as it cooks, letting it brown completely.
  3. Unroll the crescent rolls and spread them out in the bottom of a 9×13 pan, pressing the seams together to make one large sheet of dough.
  4. Spread the sausage over the dough.
  5. Sprinkle the cheese on top of the sausage.
  6. In a medium bowl, whisk the eggs with the milk, oregano or rosemary, salt, and pepper. Pour the egg mixture over the top of the casserole.
  7. Bake at 400 degrees for 15-20 minutes until the crust is golden and the eggs are set.

Pizza Casserole




Ingredients:

1 bag of Egg Noodles
1 extra large can of Ragu sauce {or any tamato sauce you prefer}
3 cups shredded mozzarella cheese {or more depending on how much you ♥ cheese!}
1 1/2 lbs hamburger meat
1 package pepperonis

Brown the meat, & drain 

And boil noodles until soft. Drain.

Don't forget to preheat the oven @ 350

Now the layering starts!

You need a 9x13 baking dish

  1.  layer quarter of the sauce
  2.  layer, half of the noodles
  3.  layer half of the meat
  4.  layer half the sauce
  5.  layer rest of the noodles
  6.  layer half of the cheese
  7.  layer rest of the meat
  8.  layer rest of the sauce
  9.  layer rest of the cheese
  10.  Top with pepperonis 

Now cover with foil and bake for 30 minutes. Remove foil and cook an additional 15 min.
Let stand 15 minutes before serving.

You can also add any other ingredient that you may like.

Sweet Potato Casserole with Pecan Topping


Prep: 14 minutes, Cook: 4 hours
Company's Coming; 15 Minutes or Less to Prep
Slow-Cooker Size: 3-quart
Yield: Makes 8 servings

Ingredients

  • 2  (29-ounce) cans sweet potatoes in syrup, drained and mashed (about 4 cups mashed)
  • 1/3  cup  butter, melted
  • 1/2  cup  granulated sugar
  • 3  tablespoons  light brown sugar
  • 2  large eggs, lightly beaten
  • 1  teaspoon  vanilla extract
  • 1/2  teaspoon  ground cinnamon
  • 1/4  teaspoon  ground nutmeg
  • 1/3  cup  heavy whipping cream
  • 3/4  cup  chopped pecans
  • 3/4  cup  firmly packed light brown sugar
  • 1/4  cup  all-purpose flour
  • 2  tablespoons  butter, melted

Preparation

Combine first 8 ingredients in a large bowl; beat at medium speed with an electric mixer until smooth. Add whipping cream; stir well. Pour into a lightly greased 3-quart slow cooker.
Combine pecans and remaining 3 ingredients in a small bowl. Sprinkle over sweet potatoes.
Cover and cook on HIGH 3 to 4 hours.
Alternative to the Oven: This is a great holiday side that cooks on the countertop while your turkey and dressing fill your oven.

Green Bean Casserole


This holiday classic is sure to become a convenient family favorite throughout the year with the help of your slow cooker.
Prep: 6 minutes; Cook: 2 hours, 30 minutes
Slow-Cooker Size: 2- or 3-quart 
Yield: Makes 8 to 10 servings

Ingredients

  • 2  (14.5-ounce) cans cut green beans, drained
  • 1  (10 3/4-ounce) can cream of mushroom soup, undiluted
  • 1  (8-ounce) package shredded Cheddar cheese
  • 2  (4.5-ounce) jars sliced mushrooms, drained
  • 1  cup  milk
  • 1  tablespoon  Worcestershire sauce
  • 1/4  teaspoon  pepper
  • 1  (6-ounce) can French fried onion rings, divided

Preparation

Combine first 7 ingredients in a large bowl; stir in half of French fried onion rings. Spoon casserole mixture into a lightly greased 2- or 3-quart slow cooker.
Cover and cook on LOW 2 hours. Sprinkle remaining onion rings on top of casserole. Cover and cook on LOW 30 more minutes.
Quick Menu:
* Roasted turkey
* Garlic mashed potatoes
* Cranberry sauce

Macaroni and Beef Casserole

1/2 pound large elbow macaroni
1 tsp. salt
1 pound ground beef
1 tbsp. oil
1/4 pound cheddar cheese
1 4-ounce can of mushrooms, drained
6-8 pineapple slices
1 8-ounce can mushrooms, drained
1 8-ounce can water chestnuts, sliced
1 pkg. (your choice) sauce mix



Cook macaroni n boiling, salted water. Cook for 10 minutes, or until tender. Drain. Brown beef in oil. In a 2 quart casserole combine macaroni, beef mushrooms and cubed cheese. Prepare sauce mix as directed on package and add to casserole. Bake 350 degrees for 45 minutes.

Chicken and Biscuits Casserole

INGREDIENTS

    • 2 cups cubed cooked chicken
    • 10 oz. cooked broccoli
    • 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
    • 1/4 cup chopped onion
    • 1/4 cup sour cream
    • 1/2 cup shredded Cheddar cheese
    • 1 1/2 tsp. Worcestershire sauce
    • 1 dash curry powder
    • 8 oz. refrigerated biscuits
    • 1/4 sour cream (for topping)
    • 1 egg (for topping)
    • 1 tsp. celery seed (for topping)
    • 1/2 tsp. salt (for topping)


DIRECTIONS

PREHEAT oven to 375 degrees.
COMBINE first 9 ingredients and pour into a lightly greased 1 1/2 quart casserole dish.
BAKE for 20-25 minutes, or until hot and bubbly.
SPRINKLE top of hot mixture with cheese.
CUT biscuits into halves and arrange over the top.
MIX sour cream, egg, celery seed, and salt to make topping; sprinkle over top of biscuits.
RETURN to oven, and continue baking 25-30 minutes, until biscuits are cooked and browned.
